Gypsy Salad

 Ingredients

1 stick hard salami
1 English cucumber
3 red/yellow bell peppers
3 tomatoes
Cubed Swiss cheese (optional)
1 small container whipping cream
salt and pepper
Garlic powder



Cut up salami in small cubes


Chop tomatoes


Chop bell peppers


peel cucumber and slice real thin
Or you can cube it as well. I guess it is
up to you how you like it.


Put everything in a large bowl and
season with salt pepper and garlic powder.
Start with little seasoning, you can always add
more but you can't remove any.





Pour whipping cream into bowl
and mix well.
Chill and serve!

Corn Salad

Ingredients

1 bundle of green onions
3 cans of corn
1/2 cup miracle whip
salt and pepper
Open the corn and drain.
Put all of it in a large bowl







Chop green onions







Add green onions and miracle whip
to corn







Stir until well blended.
Season with salt and pepper to taste
Serve.

Quick Shrimp & Rice / Schnelle Garnelenpfanne

This is a fast dinner.

Ingredients

1 onion
2 to 3 bell peppers red or yellow
2 zucchini
4 Tbsp oil
240 gr Shrimp
1 Tbsp curry powder
2 Tbsp lemon juice
240 gr boiled rice
200 ml vegetable broth
salt and pepper



Chop Zucchini into bite size pieces







Finley chop onion









Chop bell peppers into bite size pieces





Cook rice according to package









Heat oil in pan until hot








Add shrimp and cook for about 4 min
.



 

Add curry and stir until mixed with shrimp









Add lemon juice and stir well.








Remove shrimp from pan.







Add zucchini, onions and bell pepper
into the same pan. Cook until tender but not too soft.







Prepare vegetable broth according
to directions if you don't have the liquid.







Add rice and vegetable broth
to zucchinis, bell peppers and onions.
Stir until well blended.







Add shrimp and stir well.








Season with salt and pepper and serve.

Cabbage Hamburger Casserole

I love cabbage rolls but hate to make them. I found this recipe and that is so easy and it tastes great. It's not the same than the cabbage rolls but it is oh so yummy.

Ingredients

1/2 lbs cabbage. (I enough to fill the casserole dish)
1 1/2 lbs hamburger meat
1/2 cup instant rice
2 cans tomato soup
Season salt (to taste)
Pepper (to taste)

Step 1


Cut head of cabbage in half and remove stem


Step 2



Chop the cabbage in pieces



Step 3

Chop the onion


Step 4


Brown hamburger with onion until meat is done



Step 4

Mix the two cans of tomato soup with rice,
1 can of water and season with season salt
 and pepper to taste.



Step 5



Put 1/2 of chopped cabbage in a greased
casserole dish. I always use cooking spray.
That works great.

Step 6



Pour half of the tomato soup mix over cabbage.





Step 7


Put the remaining cabbage on top.





Step 8.


Cover with meat/onion mixture


Step 9


Pour rest of tomato soup mix over meat.



Step 10.

Cover with aluminum foil and bake at 350
for 1 hour or until cabbage is tender.

Stuffed Pork Loin

This takes a little bit of work but I thought it did not turn out too shabby :)

Ingredients
3lbs Pork Center loin
1 pkg Prosciutto ham very thinly sliced
8 oz of feta cheese crumbled
1 flavored sun dried tomato and basil
pepper and salt
Garlic pepper
Chicken Broth
Butcher string or silicone rubber bands


Cut pork loin so that it lays flat.
(make on cut down the middle, be careful not to go all the
way through. Then from the middle cut towards the side, be sure
not too cut all the way through there as well. Repeat on the other side)


Cover pork loin with prosciutto ham. Add the
feta cheese.



Make sure to cover all the ham with the feta cheese.





Top with flavored dried tomatoes.


Roll pork loin and secure with butcher string, or like
seen here with silicone rubber bands. Please do not use
normal rubber bands. These are made for cooking.



Season the whole rolle with salt, pepper and Garlic pepper.


Heat oil in frying pan until very hot.


Brown pork roll. Make sure it is nice and crusty.


Transfer into a casserole dish filled with the
chicken broth.


Cover and bake at 350 degrees for about 40 minutes or
until done.





Serve. (discard the chicken broth)
