Easy as Pie Lemon Meringue

This is the way I was thought to make lemon Meringue pie. Everybody likes it and its easy to make.

Ingredients

 1 Lemon Pudding cook & serve
2 1/4 cups water
3 eggs
1/2 cup and 1/3 cup sugar
1 pie crust (we like the graham cracker crust but you can
use the other kind as well)

 Separate the egg yolks from the egg whites. Keep 2 egg yolks
and all of the egg whites.


 Add together pudding mix 1/2 cup sugar 1/4 cup water
and 2 egg yolks.


Stir until smooth.


Add another 2 cups of water and stir until well
mixed.


Prepare pie crust.
 







Heat lemon mixture on stove on medium heat
until it comes to a full boil. You will have to stir it
constantly, otherwise it will burn.






After it comes to a boil remove from heat and pour
into pie crust.


Beat egg whites with mixer on full speed until
stiff.


Add 1/3 cup sugar and mix until sugar
is dissolved.


 This works best if you let the lemon
mixture cool before adding the meringue on the top.
Smooth it so it will cover the whole pie.





Bake until meringue turns golden brown.
You can broil it too but be careful it won't take
much for the meringue to burn.
Cool until pie is firm.

Indian Taco

I never had an Indian taco. I always heard about it. When I found this recipe I thought what the hell, lets try it. I have no way of knowing if this is what its supposed to look like but it tastes good. That is all that counts, right :)


Ingredients

2 pkg Active Dry Yeast
6 Cups warm water
1/2 cup Milk
1/2 cup sugar
1 cup oil
1 teaspoon salt
5 lbs flour
Shortening or oil for frying

Step 1


Add yeast and warm water, mix until yeast
is dissolved
Step 2

Add sugar, milk and salt. Mix until all is dissolved,
then add oil.
Step 3

Add flour 2 to 3 cups at a time. Mix until you can't
mix with a spoon any longer.


Step 4


Knead the remaining flour into the dough.
Dough will be sticky but manageable.


Step 5



Let dough rest about 20 minutes.



Step 6


Heat oil.



Step 7

Use a handful of dough and pat out a plate
sized. It may be easier to handle the dough if
you grease your hands with oil or shortening.


Step 8

Put flattened dough into hot oil in frying pan.
While frying poke a few air holes into the bread.




 
Step 9

Fry both sides of bread until
you are sure the bread is not doughy on the inside.




Step 10

Remove from frying pan. If it is too greasy let
a paper towel absorb the oil.




Step 11

Top with your favorite taco toppings and serve.

Pulled Pork

This is soooo easy to make and delicious too :).

Ingredients

5 lbs pork butt roast
salt and pepper to taste
1 can beef broth (14oz)
1/4 cup brewed coffee
BBQ Sauce.




Season roast with salt and pepper on both sides.








Place in crock pot.


Stir together the beef broth and coffee.









Pour over roast in crock pot



It will not cover it all but that is ok








Cover and let cook until done.
 6 to 8 hours on low setting




Roast will probably fall apart. Discard all the broth.


Remove roast from crock pot
Shred the meat. Make sure to remove all bones.



Put shredded meat in crock pot again and add BBQ Sauce.
Mix well and heat through.








Serve.

Roasted Paprika Chicken

This roasted chicken is best when cooked in a rotisserie oven but you can just put it on a cookie sheet and throw it in the oven and it will come out just fine.

Ingredients

1 whole chicken
salt
pepper
Paprika
Step 1

Sprinkle both sides of chicken with salt
pepper and paprika. Place on cookie sheet.
(You can also use a rotisserie)
Step 2

Bake at 375 degrees until crispy and chicken
is tender.


Step 3

Serve.
You can carve it or just cut it in quarters or in
half.

Mexican Torta

This is easy to make and does not take long. You can even pre make it so that all you have to do slide it in the oven once you are ready to cook it.

Ingredients

1 1/2 lbs hamburger meat
1 can diced tomatoes
1 can chili beans. I use the mild, replace with spice for added flavor)
4 tablespoons Cilantro
2 Tablespoons Taco seasoning.
1 cup sour cream
3 flour tortillas, Burrito size
shredded cheese 2 to 3 cups depends how cheesy you like it.

Step 1


Add sour cream and taco seasoning in small bowl





Step 2


Blend well and set aside for later
Step 3


Spray pie pan with cooking spray.
Step 4


Place 1 tortilla into pie pan.
Step 5


Spread 1/3 of the sour cream mix onto
tortilla.
Step 6



Brown hamburger meat and drain all the fat.






Step 7


Add chili beans, diced tomatoes and cilantro
to the hamburger meat.



Step 8



Mix well and heat through.



Step 9



Spread 1/3 of the meat mixture on top of sour cream
covered tortilla.



Step 10


Sprinkle with cheese.




Step 11


Place 2nd tortilla on top of cheese and repeat layers until
all tortillas are gone.

Step 12


Place on Cookie sheet. Bake at 350 degrees until
cheese is melted and Pie is heated through.

 
Step 14


Remove from oven and serve. You can add a
little sour cream on the side if you like.
