Easy Chicken Enchiladas

Ingredients

 1 can cream of chicken soup
1/2 cup sour cream
1 cup picante sauce
2 teaspoon chili powder
2 cups cooked, chopped chicken
1/2 cup shredded cheese
6 flour tortillas
1 small chopped tomato
1 green onion chopped


'Stir the soup, sour cream, picante sauce and chili powder
 in medium bowl







stir until well blended



Stir 1 cup picante sauce, chicken and cheese together
in medium bowl.






Divide the chicken mixture between the 6 flower tortillas


Roll up tortilla
Place seam down into 9x13 casserole dish.
Fill casserole dish with all 6 tortillas
Spread the soup mixture over rolled up tortillas







Cover and bake at 350 degrees for about 40 minutes


chop tomato and green onions.
Remove the casserole from oven once its done baking
Sprinkle with  tomatoes
Sprinkle with green onions







Serve

Potato Wedges

Instead of fries I make these potato wedges. I like them much better than fries and they are easy to fix.

Ingredients

Potatoes, cut into wedges
Olive oil
Seasoning salt.
(you can play with the seasoning. You may add garlic powder and
chili powder, or both. Whatever you like, experiment :))
Step 1


Add about 2 teaspoons of olive oil
and seasoning salt.
Step 2


Mix well


Step 3
Grease cookie sheet.
I always line a cookie sheet with aluminum foil
Less of a mess and I use cooking spray.

Step 4


Put seasoned potatoes on greased cookie sheet.

Step 5

Bake on 425 degrees for about 50 to 60 minutes
or until potato wedges are browned and cooked through.
You can always add seasonings after the potatoes are done.

Gouda Stuffed Chops

A different take on pork chops. It is a bit more work but worth it.

Ingredients

Gouda Cheese
salt
pepper
olive oil
4 slices bacon
4 pork chops



With a sharp knife cut a pocket into the pork chops.






Cut up bacon






Shred the Gouda cheese. You will probably need about
1 cup shredded cheese.





Fry bacon and drain excess fat.
Set aside.






 In a small bowl, mix bacon, shredded Gouda and about
1/8 teaspoon black pepper






Mix well.






Spoon some of the mixture into the pork chop
pocket.





secure the edges of the pork chop with toothpicks.
If you can find thin, small metal skewers they will
work best but toothpicks will do.




Brush meat with olive oil






Sprinkle with salt and pepper on both sides.






These pork chops should be grilled until done.
I ran out of propane for the grill and had to fry them
in the pan. They turned out good but if grilled they would
have been even better.

yeats Rolls

These are yummy. Not just your plain everyday rolls.

Ingredients

2 to 2 1/2 cups flour
2 Tablespoon sugar
1 package quick rise yeast
1/2 teaspoon salt
3/4 cup water
4 Tablespoon melted butter
3/4 cup shredded cheese
2 teaspoon honey
1/8 teaspoon garlic salt
In large bowl combine 1 1/2  cup flour, sugar
yeast and salt
Add water and 2 tablespoon  butter and
beat on medium speed for 3 minutes or until smooth
Stir in cheese and  remaining flour


Mix until it forms a soft dough.
Knead until smooth and elastic. (You may have to add
a little more flour. )
Grease a round baking pan about 9 inch diameter.
Divide into pieces. Makes about 10 to 13.
Depending on how big you make them. Shape
all pieces into balls.






Place shaped balls into greased pan.







Let rise in warm place. Try to have them double the
size but it does not always rise as much







Add honey and garlic salt into remaining melted butter.








Bake at 350 degrees for 11 to 14 minutes or until
golden brown.






Brush with butter mixture and serve.

Cheesy Brokolie and Potato Soup

Easy and fast to make. Good on a cold day.

Ingredients

about 5 medium potatoes, chopped
3 cups can of chicken broth
1 family size frozen bag of broccoli
2 cups milk
2 cups smoked Gouda, shredded



Peel potatoes
Chop into pieces



Combine potatoes and chicken broth in large pot.



Shred Gouda cheese. I could only find it in a pick piece.
Bring potatoes with chicken broth to a boil.
Reduce heat and simmer for about 8 minutes




Add broccoli and milk and bring
just to simmering


Add Gouda cheese and stir until cheese is melted


season with salt and pepper to taste
Stir well






Serve
