Jeanne's Meatloaf

My daughter says this is the best meatloaf ever. Even her friends like it when they eat over. It is so easy to make. Just takes a long time to cook. So, here it is.

Ingredients

2 1/2 lbs lean hamburger meat
2 packages onion soup mix
1/3 cup bread crumbs
2/3 cup milk
1 egg

Topping
6 Tablespoons ketchup
6 Tabelspoons brown sugar
2 Tabelspoons mustard

Step 1

Combine hamburger meat, milk,egg, onion soup mix,
and bread crumbs.



Step 2



Mix until everything is blended well.





Step 3


Divide meat into 2 bread pans.
(I like to spray the pans with cooking spray to prevent sticking)
Press meat firmly into pans.

Step 4


Combine ketchup, mustard and brown sugar.
Mix until well blended.


Step 5

Divide topping between the two loaves of meat.
Spred evenly on top.
Bake in oven at 375 degrees for 1 hour.


Step 6


After 1 hour remove the pans from the oven.
There will be a lot of water and meat juice.


Step 7


Remove meatloave from pan and serve.
We like it with mashed potatoes and corn.

Black Bean Tortilla Pie

This meatless dish is tasty!!! And it is fairly fast to prepare.  Who can ask for more. Here it goes.


1 medium onion
1 medium green pepper
3 garlic gloves, minced
1 teaspoon ground cumin
1/4 teaspoon pepper
1 tablespoon oil
2 cans black beans, rinsed and drained
1 can broth (14 1/2 ounces) you can use vegetable or chicken broth
1 package frozen corn
4 flour tortillas (8 inches) burrito size
1 package shredded cheese

Step 1


Chop onion, green pepper and garlic. If you are like me you buy the garlic already in a jar. According to the directions on the jar, 1 teaspoon equals 1 garlic glove.Mix pepper and cumin together.






Step 2



Heat oil in pan. Add onion, green pepper, garlic and cumin. Saute.



Step 3


Add broth and black beans. ( I used chicken broth) Bring to a boil and cook until the liquid is reduced to about 1/3 cup.





Step 4


Stir in corn and heat. Once mixture is
hot remove from heat.






Step 5


Coat a 9 inch springform with cooking spray.




Step 6


Place one tortilla in bottom of springform. Top with 1/3 of the bean and corn mixture. Then sprinkle with cheese.




Step 7



Repeat layers 2 more times and top with last Tortilla.




Step 8
Heat oven to 400 degrees. Put springform onto cooking sheet and bake uncoverd for 15 to 20 minutes or until heated through and top is golden brown. Remove from oven. You may sprinkle top with cheese if desired.



Step 9


Remove side from springform. Cut into triangles and serve. This will be messy. Filling will spill out once you remove the sides.
