Momma J's X-mas cookies

My daughters favorite cookies at Christmas.

Ingredients
1 cup sugar
1 cup butter
1 teaspoon vanilla
1 teaspoon baking soda
2 teaspoon cream of tartar
2 eggs
1 Tablespoon milk
3 cups flour
1/2 teaspoon nutmeg


In large bowl combine eggs, and butter
Mix until well blended.








Add milk and vanilla







Mix until well blended 



 

 

Add flour, cream of tartar, nutmeg and baking soda.
Mix and knead until everything is well blended and
dough is formed.
Put dough on plate
Cover and refrigerate at least 4 to 5 hours or overnight.
After dough has rested, sprinkle flat surface with flour.


Get part of dough, sprinkle with flour.
Roll out dough to desired thickness.
Don't make them to thin.
Spread parchment paper on cookie sheet.
Cut out cookies with cookie cutter.
Repeat process until all dough is gone.
Bake at 350 degrees for 8 to 10 minutes
Decorate cookies as desired. We spread frosting on them.

Cheescake Brandy Alexander

For all the cheesecake lovers. Here is an adult version :)

Ingredients

1 box chocolate flavored graham crackers (10oz)
6 Tablespoon Butter, melted
2 Tablespoon sugar
4 packages cream cheese
1 1/4 cup sugar
3 Tablespoon cornstarch
4 large eggs at room temperature
4 Tablespoon brandy
4 Tablespoon creme de cacao
1 (16oz) container of sour cream

 


Crush the whole box of crackers until you have
very fine crumbs. It works best with a blender.









 Pour crumbs into a bowl.


 

Melt butter.











Add melted butter and 1 Tablespoon sugar to
crackers





Mix together until well blended.


 





Press crumb dough into 9 inch spring form.
Make sure to go up the sides about
half way.






Mix Cream cheese, 1 1/4 cup sugar
and cornstarch. Add eggs one at a time until yellow
disappears. Then Add 3 Tablespoon brandy and
3 Tablespoon creme de cacao.







Beat with electric mixer until smooth.







Pour cream cheese mixture into spring form.
Bake at 325 degrees for about 1 hour or just until
center is almost set.






During last 2 minutes of baking.
Stir together the sour cream, 1 Tablespoon sugar,
and 1 Tablespoon each brandy and creme de cacao.

 

 


Mix until well blended.







Spread sour cream mixture over baked cheesecake
and bake at 325 degrees for another 8 more minutes.





Remove from oven and gently run a knife along outer edge of
cheesecake and cool.






 



After it is cooled remove from spring form and serve.

Oven baked ranch Chicken

Be careful not to bake too long other wise it gets a little dry. But it is tasty.

Ingredients

 1/3 cup plain bread crumbs
1 package ranch dressing mix (4oz)
sour cream
4 boneless chicken breast


Mix bread crumbs with ranch dressing.

Put sour cream onto a plate.

Grease a cookie sheet.

 Roll chicken breast in sour cream until well covered.

Cover in bred crumbs mixture.

Place onto greased cookie sheet.

 Bake at 375 degrees for about 30 to 35 minutes or
until chicken is cooked through.







Serve.

Poor Mans Steak

This can make 2 meals for you depending on how many people you plan to feed. Its not hard to make and if you freeze part it will be easy to have dinner on the table in no time.

Ingredients

3 pounds ground beef
1 cup bread crumbs
1 cup milk
1 package Beef stew seasoning mix
1 teaspoon garlic powder you can adjust to you taste
salt and pepper to taste
1 to 2 cans of cream of mushroom soup
1 can water
flour


Combine hamburger meat, bread crumbs, seasonings,
and milk. Mix well.


Form meat patties.

Pour some flour on a plate.

 Roll hamburger Patti in flour until coated.

 Mix together the cream of mushroom soup and the
water. Add a few shakes of salt and pepper to taste.

 Brown patties in a nonstick frying pan with no grease.

  Place browned patties in a casserole dish.


 Pour sup mixture over patties.





 Bake in oven at 375 degrees about 1 1/2 hours or until done.









Serve with some mashed potatoes and top them with
fried onions if you like. You can even cut up the onion
and bake it with the patties.


You can freeze some of the patties just place waxed papers
between the patties when freezing. Use 1 can of soup if you make
half the patties and 2 if you make everything. If you want more
gravy use more soup :)
