Gnocchi

This reminds me of the German potato dumplings. So next time I will serve them with a pot roast and gravy. yum yum!

Ingredients

6 -8 boiled potatoes
(Left over potatoes will work for this)
1 cup Flour
1 egg
1 tablespoon olive oil
pinch of salt



Step 1


Mash potatoes. Do not add Milk or butter!!!




Step 2


Add rest of ingredients




Step 3

Mix well. Knead until a soft but somewhat
sticky dough forms.


Step 4


Make several long ropes out of dough.
(to keep it from sticking to the surface
you can put flour down)




Step 5


Cut into 1/2 inch slices




Step 6


Bring water to a boil




Step 7

Carefully add the slices to boiling water
Step 8


Cook 3-5 minutes or until they float.
Drain and serve.






I fried these in butter with onions and sprinkled
 with bacon bits. But you can use them with your
favorite Sauce instead of noodles
